Jack-O-Latern Stuffed Peppers

These Jack-O-Latern stuffed bell peppers are the perfect spooky night dish. A wholesome meal that is great for cozy nights in, parties, or a fun family dinner.


Ingredients

  • 6 orange bell peppers
  • 1 white onion
  • olive oil
  • 3 cloves of minced garlic
  • 1 lb ground beef if desired
  • 8 oz fire roasted tomatoes
  • 1 cup of cooked rice
  • 1 cup of shredded mozzarella cheese
  • 1 cup of sharp shredded cheddar cheese
  • 1 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp paprika
  • 2 tsp cumin
  • 2 tsp oregano
  • salt and pepper to taste

Instructions

  1. Preheat your oven to 425 degrees. Cut the tops off of your bell peppers and clean out the insides. Using a small knife carve your desired faces into each pepper. Save the tops and dice them up to put into filling later. Cook bell peppers in a deep baking dish for about 20 minutes to soften them.
  2. Dice up the white onion and the tops of your peppers.
  3. In a large skillet, heat olive oil on medium-high heat and add in the chopped bell peppers and onion. Cook until soft, about 8 to 10 minutes.
  4. Cook your rice in a separate pot as you are cooking veggies. After veggies are soft, add garlic and cook for another minute or two, remove from heat once done.
  5. Cook your ground beef and add in all seasonings including salt and pepper for taste. Add tomatoes, cooked rice, and all the cooked veggies into the pan with the meat. Stir until mixed well then add in cheese and mix again until melted. Turn heat on low.
  6. Once peppers are done, remove from oven and spoon rice mixture into each pepper until almost full and add more cheese to top. Pop peppers back into the oven to melt the cheese for another 10 minutes until cheese is bubbling and a little browned.
  7. Once peppers are done, let sit for about 5 minutes before serving. Enjoy!
