This hearty jambalaya is the coziest comfort dish. Filled with bold, spicy flavors, it’s the perfect meal to warm you up on a chilly day, but it’s just as good on a hot one if you love it as much as I do.
Ingredients
- 3 cups cooked white rice
- andouille sausage cooked and sliced
- 1 lb shrimp
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp pepper and salt
- 1 tbsp Cajun seasoning
- 1 tsp cayenne pepper
- 1 and a half cups chicken stock
- 2 cups crushed tomato
- 4 chopped garlic cloves
- 1 chopped white onion
- 1 diced green bell pepper
- 2 bay leaves
Instructions
- In a big pot cook sausage with 1 tbsp oil and all seasonings on medium-high heat for 5 minutes or until brown.
- After sausage is cooked place in separate bowl and set aside. Then add more oil to your pot along with green bell pepper, one white onion, & chopped garlic.
- Cook for about 1 minute on medium-low heat until veggies are tender. Scrape any brown bits on the bottom of the pot.
- Add chicken stock, crushed tomatoes, cooked rice, and bay leaves. Mix well then add sausage back into pot.
- Turn heat up to medium-high. And once it reaches a boil turn it down to a simmer and let simmer covered for 10 mins.
- Add shrimp, cover, and let cook until they’re done. About another 5 minutes.
- Take off heat and serve!
