Madi’s Jambalaya

This hearty jambalaya is the coziest comfort dish. Filled with bold, spicy flavors, it’s the perfect meal to warm you up on a chilly day, but it’s just as good on a hot one if you love it as much as I do.


Ingredients

  • 3 cups cooked white rice
  • andouille sausage cooked and sliced
  • 1 lb shrimp
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp pepper and salt
  • 1 tbsp Cajun seasoning
  • 1 tsp cayenne pepper
  • 1 and a half cups chicken stock
  • 2 cups crushed tomato
  • 4 chopped garlic cloves
  • 1 chopped white onion
  • 1 diced green bell pepper
  • 2 bay leaves

Instructions

  1. In a big pot cook sausage with 1 tbsp oil and all seasonings on medium-high heat for 5 minutes or until brown.
  2. After sausage is cooked place in separate bowl and set aside. Then add more oil to your pot along with green bell pepper, one white onion, & chopped garlic.
  3. Cook for about 1 minute on medium-low heat until veggies are tender. Scrape any brown bits on the bottom of the pot.
  4. Add chicken stock, crushed tomatoes, cooked rice, and bay leaves. Mix well then add sausage back into pot.
  5. Turn heat up to medium-high. And once it reaches a boil turn it down to a simmer and let simmer covered for 10 mins.
  6. Add shrimp, cover, and let cook until they’re done. About another 5 minutes.
  7. Take off heat and serve!
